Ingredients

  • 2 cups cooked rice
  • 1 pound boneless chicken thighs or breasts
  • 1 cup pineapple chunks
  • 1 bell pepper
  • 1 cup broccoli florets
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame oil
  • 3 green onions (for garnish)
  • Sesame seeds (for garnish)


Instructions

  1. Prepare the teriyaki sauce by heating soy sauce, honey, rice vinegar, minced ginger, minced garlic, and sesame oil in a saucepan over medium heat.
  2. In a small bowl, mix cornstarch with water and add it to the saucepan, stirring until the sauce thickens.
  3. In a skillet or wok, heat vegetable oil over medium-high heat and add the chicken pieces, cooking until browned and fully cooked.
  4. Add the bell pepper and broccoli, stir-frying until tender-crisp.
  5. Mix in the pineapple chunks and pour the teriyaki sauce over the contents of the skillet. Cook for a few more minutes to blend the flavors.
  6. Serve the Chicken Teriyaki Pineapple Bowls over the cooked rice, garnishing with green onions and sesame seeds.
