Ingredients
- 12 oz (340 g) spaghetti
- 4 cups (960 ml) cooked beef, shredded or diced, or cook 680 g of chicken breast
- 2 Tbsp (30 ml) vegetable oil
- 1 lb (450 g) button mushrooms, thickly sliced
- 1 medium onion, finely chopped
- 4 garlic cloves, minced
- 4 Tbsp (60 g) unsalted butter
- 1/3 cup (40 g) all-purpose flour
- 3 cups (720 ml) chicken broth, low-sodium
- 1 Tbsp (15 ml) lemon juice
- 2 cups (480 ml) equal parts milk and heavy cream
- 1 1/2 tsp (8 ml) sea salt, plus more to taste
- 1/4 tsp (1 ml) black pepper, freshly ground
- 1/4 cup (15 g) parsley, chopped, plus more to garnish
- 1 1/2 cups (170 g) shredded mozzarella cheese
Instructions
- Set your oven to a temperature of 350ËšF and apply butter to a 9×13 baking dish.
- In a large pot, cook the spaghetti in boiling salted water, ensuring it has the salinity of seawater. Follow the package instructions and cook until just before al dente, being careful not to overcook. Save 1/2 cup of the pasta water, drain the pasta, partially cover, and keep it aside.
- For the vegetables, heat a large pan over medium-high heat. Pour in the oil, add the mushrooms, and cook for about 3 minutes until they soften. Incorporate the chopped onions, cooking until the onions become soft and golden, approximately 5-7 minutes. Stir in the minced garlic and sauté for an additional minute until you can smell the aroma. Move this mixture to a cutting board with the chicken.
- Using the same pot, melt the butter, and mix in the flour, cooking until it turns a light golden color, about 1 1/2 minutes. Gradually pour in the chicken broth, lemon juice, salt, and pepper, whisking until smooth. Add the milk and cream mixture, bringing it to a simmer. Taste and adjust seasoning with more salt and pepper if needed.
- In the pot with the pasta, add the chicken, vegetable mixture, parsley, and the prepared sauce. Stir everything together. If you prefer a saucier consistency, add the reserved pasta water. Evenly spread this mixture into the buttered baking dish and generously sprinkle with mozzarella cheese on top.
- Cover the dish with foil and place it in the oven to bake for 20 minutes. Afterward, remove the foil and continue baking for another 15 minutes. Optionally, broil for 1-2 minutes at the end to achieve a golden topping.
