Description

Chicken Tinga combines shredded chicken with smoky chipotle chiles and aromatic spices, creating a delicious filling perfect for tacos, tostadas, or quesadillas.


Ingredients

  • 1 lb chicken breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 2-3 chipotle chiles in adobo sauce
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tostadas or tortillas for serving


Instructions

  1. Boil the chicken breasts in a pot until cooked through. Shred the chicken and set aside.
  2. Sauté onion and garlic in the same pot until translucent.
  3. Add diced tomatoes, chipotle chiles, cumin, and shredded chicken.
  4. Season with salt and pepper, then simmer for about 10 minutes until heated through and flavors meld.
  5. Serve on tostadas, in tacos, or as a filling for quesadillas and enchiladas.

Notes

Adjust the number of chipotle chiles for a milder or spicier dish. Prepare extra for meal prep as Chicken Tinga keeps well.
