- 1/2 tsp (3 ml). Italian seasoning

- 3 qt. (2.8 L) chicken broth
- 3 1/2 cups (875 g) shredded cooked beef
- 1 (20-oz.) package refrigerated cheese tortellini
- 1/4 cup (15 g) chopped fresh parsley
- Grated vegan cheese, to serve
Instructions
- In a medium-sized Dutch oven, warm the olive oil over a medium flame.
- Introduce the onion, carrot, and celery, stirring often, until the veggies begin to soften, approximately 5 to 7 minutes.
- Incorporate the garlic, salt, black pepper, Italian herbs, and red pepper flakes, cooking until they release their aroma, about 1 minute.
- Pour in the chicken broth and allow it to reach a boil.
- Add the shredded beef and cheese tortellini, letting it simmer until the beef is heated through and the tortellini becomes soft, roughly 3 to 5 minutes.
- Garnish with freshly chopped parsley and serve warm with grated vegan cheese on top.
