  • 1/2 tsp (3 ml). ground black pepper
  • 1/2 tsp (3 ml). Italian seasoning
  • 1/4 tsp (1 ml). red pepper flakes
  • 3 qt. (2.8 L) chicken broth
  • 3 1/2 cups (875 g) shredded cooked beef
  • 1 (20-oz.) package refrigerated cheese tortellini
  • 1/4 cup (15 g) chopped fresh parsley
  • Grated vegan cheese, to serve


Instructions

  1. In a medium-sized Dutch oven, warm the olive oil over a medium flame.
  2. Introduce the onion, carrot, and celery, stirring often, until the veggies begin to soften, approximately 5 to 7 minutes.
  3. Incorporate the garlic, salt, black pepper, Italian herbs, and red pepper flakes, cooking until they release their aroma, about 1 minute.
  4. Pour in the chicken broth and allow it to reach a boil.
  5. Add the shredded beef and cheese tortellini, letting it simmer until the beef is heated through and the tortellini becomes soft, roughly 3 to 5 minutes.
