Ingredients

  • 2 tbsp. olive oil (30 ml)
  • 1 medium yellow onion, chopped
  • 3 medium carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 3 cloves garlic, finely chopped
  • 1 tsp (5 ml). salt
  • 1/2 tsp (3 ml). ground black pepper
  • 1/2 tsp (3 ml). Italian seasoning
  • 1/4 tsp (1 ml). red pepper flakes
  • 3 qt. chicken broth (2.8 L)
  • 3 1/2 c. shredded cooked beef
  • 1 (20-oz.) package refrigerated cheese tortellini
  • 1/4 c. chopped fresh parsley
  • Grated cheese, to serve


Instructions

  1. In a medium-sized Dutch oven, warm the olive oil on medium heat. Introduce the onion, carrots, and celery, stirring often, until they begin to soften, about 5 to 7 minutes. Add the garlic, salt, black pepper, Italian herbs, and red pepper flakes, cooking for 1 minute until aromatic.
  2. Pour in the chicken broth and allow it to reach a boil. Mix in the beef and cheese tortellini, simmering until the beef is heated through and the tortellini is soft, around 3 to 5 minutes. Garnish with chopped parsley and serve hot with grated cheese on top.
