Ingredients
- 2 tbsp. olive oil (30 ml)
- 1 medium yellow onion, chopped
- 3 medium carrots, peeled and sliced
- 3 stalks celery, sliced
- 3 cloves garlic, finely chopped
- 1 tsp (5 ml). salt
- 1/2 tsp (3 ml). ground black pepper
- 1/2 tsp (3 ml). Italian seasoning
- 1/4 tsp (1 ml). red pepper flakes
- 3 qt. chicken broth (2.8 L)
- 3 1/2 c. shredded cooked beef
- 1 (20-oz.) package refrigerated cheese tortellini
- 1/4 c. chopped fresh parsley
- Grated cheese, to serve
Instructions
- In a medium-sized Dutch oven, warm the olive oil on medium heat. Introduce the onion, carrots, and celery, stirring often, until they begin to soften, about 5 to 7 minutes. Add the garlic, salt, black pepper, Italian herbs, and red pepper flakes, cooking for 1 minute until aromatic.
- Pour in the chicken broth and allow it to reach a boil. Mix in the beef and cheese tortellini, simmering until the beef is heated through and the tortellini is soft, around 3 to 5 minutes. Garnish with chopped parsley and serve hot with grated cheese on top.
