Ingredients

  • – 1-2 tablespoons (15-30 ml) olive oil
  • – 1 ¼ lbs. (567 g) beef, see notes
  • – Salt/Pepper
  • – 2 tablespoons (28 g) vegetable oil
  • – 1 small yellow onion, diced
  • – ¾ cup (180 ml) carrots, diced
  • – 2 ribs celery, diced
  • – 3 cloves garlic, minced
  • – 1 teaspoon (5 ml) hot sauce
  • – 1 teaspoon (5 ml) Worcestershire sauce
  • – 7 cups (1.65 L) chicken broth
  • – 1 ½ cups (225 g) frozen mixed vegetables, (corn/green beans)
  • – 1 teaspoon (5 ml) dried parsley
  • – 1/2 teaspoon (3 ml) EACH: Dried basil, oregano, mustard powder
  • – 1/4 teaspoon (1 ml) pepper


Instructions

  1. Dry the beef with a paper towel and sprinkle with salt and pepper.
  2. Warm up olive oil in a 4.5-quart soup pot over medium-high heat. Brown the beef on both sides for approximately 3 minutes each, until a golden crust forms. (It’s fine if the inside isn’t fully cooked; it will finish cooking in the soup later.)
  3. Take the beef out and let it rest for 10 minutes, then chop or shred it.
  4. In the same pot, melt the vegetable oil over medium heat. Use a silicone spatula to scrape and incorporate the browned bits from the bottom and sides of the pot into the oil, enhancing the flavor.
  5. Sauté the onions, carrots, and celery for 5 minutes until they begin to soften.
  6. Mix in the garlic, hot sauce, Worcestershire sauce, and dry seasonings. Stir everything together.
  7. Pour in the chicken broth, raise the heat to bring it to a boil, then lower it to a simmer. Return the beef to the pot with any juices collected and let it simmer uncovered for 15 minutes.
  8. Stir in the frozen mixed vegetables. Partially cover the pot and allow it to simmer for another 10-15 minutes. Serve hot!
