Ingredients
- – 1-2 tablespoons (15-30 ml) olive oil
- – 1 ¼ lbs. (567 g) beef, see notes
- – Salt/Pepper
- – 2 tablespoons (28 g) vegetable oil
- – 1 small yellow onion, diced
- – ¾ cup (180 ml) carrots, diced
- – 2 ribs celery, diced
- – 3 cloves garlic, minced
- – 1 teaspoon (5 ml) hot sauce
- – 1 teaspoon (5 ml) Worcestershire sauce
- – 7 cups (1.65 L) chicken broth
- – 1 ½ cups (225 g) frozen mixed vegetables, (corn/green beans)
- – 1 teaspoon (5 ml) dried parsley
- – 1/2 teaspoon (3 ml) EACH: Dried basil, oregano, mustard powder
- – 1/4 teaspoon (1 ml) pepper
Instructions
- Dry the beef with a paper towel and sprinkle with salt and pepper.
- Warm up olive oil in a 4.5-quart soup pot over medium-high heat. Brown the beef on both sides for approximately 3 minutes each, until a golden crust forms. (It’s fine if the inside isn’t fully cooked; it will finish cooking in the soup later.)
- Take the beef out and let it rest for 10 minutes, then chop or shred it.
- In the same pot, melt the vegetable oil over medium heat. Use a silicone spatula to scrape and incorporate the browned bits from the bottom and sides of the pot into the oil, enhancing the flavor.
- Sauté the onions, carrots, and celery for 5 minutes until they begin to soften.
- Mix in the garlic, hot sauce, Worcestershire sauce, and dry seasonings. Stir everything together.
- Pour in the chicken broth, raise the heat to bring it to a boil, then lower it to a simmer. Return the beef to the pot with any juices collected and let it simmer uncovered for 15 minutes.
- Stir in the frozen mixed vegetables. Partially cover the pot and allow it to simmer for another 10-15 minutes. Serve hot!
