Ingredients
- 2 cups wild rice
- 1 lb chicken breasts, chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups milk
- 1 teaspoon salt
- 1 teaspoon poultry seasoning
- Sturdy bread for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large baking dish, combine the wild rice, chicken, onion, carrots, celery, and chicken broth. Cover with foil and bake for 1 hour and 15 minutes.
- In a saucepan, melt butter over medium heat. Add flour, salt, and poultry seasoning; cook for 1 minute.
- Whisk in milk gradually to avoid lumps; cook until smooth and creamy.
- Once the rice is tender, remove the casserole from the oven, stir in the raw chicken and creamy sauce.
- Increase oven temperature to 450°F (230°C) and bake until chicken is cooked through and topping is golden brown, about 20-30 minutes.
Notes
