Description

A warm and hearty Chicken Wild Rice Casserole combining tender chicken, nutty wild rice, and a creamy sauce.


Ingredients

  • 2 cups wild rice
  • 1 lb chicken breasts, chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning
  • Sturdy bread for topping


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large baking dish, combine the wild rice, chicken, onion, carrots, celery, and chicken broth. Cover with foil and bake for 1 hour and 15 minutes.
  3. In a saucepan, melt butter over medium heat. Add flour, salt, and poultry seasoning; cook for 1 minute.
  4. Whisk in milk gradually to avoid lumps; cook until smooth and creamy.
  5. Once the rice is tender, remove the casserole from the oven, stir in the raw chicken and creamy sauce.
  6. Increase oven temperature to 450°F (230°C) and bake until chicken is cooked through and topping is golden brown, about 20-30 minutes.
