Ingredients
- 1 lb. (454 g) chicken tenders
- Salt and pepper
- 1/2 tsp. garlic powder
- 2 tbsp. vegetable oil
- 1 1/2 cups white rice, (uncooked)
- 3 cups beef broth
- 1/2 cup Parmesan cheese, (grated or shredded)
Instructions
- Warm vegetable oil in a large pan over medium flame. Sprinkle chicken with salt, pepper, and garlic powder. Cook the chicken tenders until they are golden brown and thoroughly cooked. Take them out of the pan and place them aside.
- Into the empty pan, add minced garlic, and 1/2 teaspoon of salt, then sauté the garlic for a few minutes over medium heat.
- Increase the flame to medium-high and pour in the apple juice. Let it cook while stirring for around 5 minutes. Set aside 3 tablespoons of this sauce for later use.
- Put the uncooked rice into the pan with the remaining mixture. Mix thoroughly to ensure it is fully coated. Pour in beef broth and the remaining 1/2 teaspoon of salt. Bring the mixture to a gentle boil, then lower the heat to medium-low, cover the pan, and let it simmer for 20 minutes or until the rice is soft. Stir occasionally during the cooking process.
- Scatter Parmesan cheese over the rice, then place the chicken tenders on top of the rice in the pan. Cover, remove from the heat, and allow it to sit for 5 minutes.
- When serving, drizzle the reserved 3 tablespoons of sauce over the chicken tenders and garnish with parsley.
