Description

A comforting Chicken Zucchini Bake made with tender chicken, vibrant zucchinis, and topped with gooey cheese. Perfect for family gatherings.


Ingredients

  • 2 large chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh basil (for garnish, optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced chicken, Italian seasoning, salt, and pepper, cooking until no longer pink (6–8 minutes).
  3. Add minced garlic and sauté for an additional 1–2 minutes until fragrant.
  4. Combine sliced zucchini and cherry tomatoes with the chicken mixture in a greased 9×13 inch baking dish.
  5. Sprinkle mozzarella and Parmesan cheese over the mixture.
  6. Bake in the preheated oven for 30–35 minutes or until cheese is bubbly and golden.
  7. Cool for 5–10 minutes before garnishing with fresh basil.
