Ingredients
- 2 large chicken breasts, diced
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh basil (for garnish, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced chicken, Italian seasoning, salt, and pepper, cooking until no longer pink (6–8 minutes).
- Add minced garlic and sauté for an additional 1–2 minutes until fragrant.
- Combine sliced zucchini and cherry tomatoes with the chicken mixture in a greased 9×13 inch baking dish.
- Sprinkle mozzarella and Parmesan cheese over the mixture.
- Bake in the preheated oven for 30–35 minutes or until cheese is bubbly and golden.
- Cool for 5–10 minutes before garnishing with fresh basil.
