Ingredients
- 1 tablespoon olive oil (15 ml)
- 2 zucchinis (225 g), thinly sliced
- 2 large peeled carrots (200 g), chopped
- 1 cup chopped yellow onion (150 g)
- 2 cans (300 g each) cream of chicken soup
- 1 cup plain yogurt (240 ml)
- 2 tablespoon (30 ml) finely chopped fresh tender herbs, such as parsley, tarragon, and basil, plus more
- 1 teaspoon (5 ml) salt
- 1 teaspoon (5 ml) black pepper
- 4 cups shredded cooked chicken breasts (600 g)
- 4 ounces mozzarella cheese (115 g), shredded
- 1 1/4 cups breadcrumbs (150 g)
- 2 1/2 tablespoon vegetable oil (35 g), melted
Instructions
- Collect all necessary items. Set your oven to 350 degrees F (175 degrees C) for preheating. Lightly coat a 9×13-inch baking dish with a non-stick spray and put it aside.
- Warm olive oil in a large nonstick pan over medium-high heat. Introduce the zucchini slices, chopped carrots, and onion to the pan. Stir occasionally and let them cook until they become tender, roughly 10 minutes. Take the pan off the heat and allow it to cool.
- In a sizable bowl, blend the cream of chicken soup, plain yogurt, herbs, salt, and black pepper until smooth. Gently incorporate the shredded chicken and the cooked vegetable mixture into the creamy blend, ensuring everything is well covered. Pour this into the prepared baking dish and spread it out evenly. Sprinkle the top with mozzarella cheese.
- Combine breadcrumbs and melted vegetable oil in a small bowl, mixing until well integrated. Disperse this mixture evenly over the top of the casserole.
- Place in the oven you preheated earlier and bake until the mozzarella is gooey, the chicken mixture bubbles at the edges, and the breadcrumbs achieve a golden hue, approximately 45 minutes. Decorate with extra fresh herbs for garnish.
