A vibrant and flavorful Chinese chicken salad combining shredded chicken, fresh greens, and a zesty Asian dressing.
Ingredients
- 2 cups rotisserie chicken breast, shredded
- 1 head romaine lettuce, shredded
- 1 head iceberg lettuce, shredded
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1/4 cup thinly-sliced green onions
- 3 tablespoons cilantro leaves (optional), roughly chopped
- Asian salad dressing
- 1 pinch crushed red pepper flakes
- 1 tablespoon sesame seeds
- 1/2 cup slivered almonds
- 1 cup crispy wonton strips
Instructions
- Add the shredded chicken to a large bowl.
- Pour half of the Asian dressing over the chicken and toss until all pieces are well coated. Allow the chicken to marinate for at least 10 minutes to soak in the flavors.
- Incorporate the romaine lettuce, iceberg lettuce, red cabbage, carrots, green onions, and optional cilantro into the bowl. Toss gently to combine all the ingredients evenly.
- When ready to serve, drizzle the remaining dressing over the salad and toss once more for distribution.
- Garnish with crushed red pepper flakes, sesame seeds, slivered almonds, and crispy wonton strips. Serve and enjoy immediately while everything remains crisp and delightful.
Notes
Customize the salad by adding your favorite vegetables. Allow the salad to sit for about 10 minutes before serving to allow the flavors to meld. For a heartier version, consider adding cooked quinoa or brown rice.
