Description
A delightful combination of sweet and spicy chipotle honey chicken thighs served over creamy smoked gouda mashed potatoes.
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1/4 cup honey
- 2 tablespoons chipotle sauce
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 pound potatoes, peeled and cubed
- 1/2 cup milk
- 4 ounces smoked gouda cheese, shredded
- 2 tablespoons butter
Instructions
- Preheat the oven to 375°F (190°C).
- Mix honey, chipotle sauce, garlic powder, paprika, salt, and pepper in a bowl.
- Coat chicken thighs with the mixture and place in a baking dish.
- Bake for 35-40 minutes or until cooked through.
- Boil potatoes in salted water until tender, about 15-20 minutes.
- Drain potatoes and mash them with milk, smoked gouda, and butter until creamy.
- Serve chicken thighs over the smoked gouda mashed potatoes.
Notes
For extra crispiness, broil the chicken for a few minutes at the end of the cooking time. Marinate the chicken for at least 30 minutes for more flavor.
