Description

A perfect blend of sweet and spicy chicken thighs paired with creamy smoked gouda mashed potatoes, ideal for weeknight dinners or cozy feasts.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle powder
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 cup smoked gouda cheese, shredded


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix chipotle powder, honey, olive oil, salt, and pepper in a bowl. Coat the chicken thighs with this mixture.
  3. Place the chicken thighs on a baking sheet and bake for 30-35 minutes or until cooked through.
  4. Peel and chop the potatoes, then boil in salted water until tender.
  5. Drain the potatoes and mash them with milk and butter until smooth.
  6. Stir in the smoked gouda until melted and creamy.
  7. Serve the chicken thighs over the gouda mashed potatoes.

Notes

Adjust the spice level by altering the amount of chipotle powder based on personal preference. For added caramelization, broil the chicken for the last 3-5 minutes.
