Description

A flavorful grilled chicken recipe featuring a sweet and spicy marinade made from chipotle peppers and honey.


Ingredients

  • 600 g boneless, skinless chicken thighs
  • 3 tbsp honey
  • 2 tbsp chipotle peppers in adobo sauce
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh cilantro, for garnish


Instructions

  1. Whisk together the honey, minced chipotle peppers with their adobo sauce, minced garlic, olive oil, lime juice, cumin, smoked paprika, salt, and black pepper in a medium bowl.
  2. Place the chicken thighs in a large zip-top bag or shallow baking dish. Pour about two-thirds of the marinade over the chicken, reserving the remaining third for basting later. Seal the bag or cover the dish, ensuring all chicken pieces are coated in the marinade. Pop it in the refrigerator to marinate.
  3. Preheat your grill, grill pan, or oven to medium-high heat (approximately 200°C/400°F).
  4. Remove the chicken from the marinade, letting the excess drip off, and discard the used marinade that the raw chicken was sitting in.
  5. Cook the chicken for about 6-7 minutes on the first side. Flip the chicken and cook for an additional 5-6 minutes on the second side.
  6. Brush the reserved, clean marinade over the cooked side of the chicken. Continue to cook, flipping and basting occasionally, for another 2-3 minutes per side. The chicken is done when it reaches an internal temperature of 74°C/165°F and the juices run clear.
  7. Transfer the chicken to a clean plate or cutting board and let it rest for about 5 minutes.
  8. Garnish the Chipotle Honey Chicken with finely chopped cilantro and serve with lime wedges on the side.

Notes

For added heat, incorporate more chipotle peppers or cayenne pepper. Ensure to let the chicken rest after cooking for best texture.
