Ingredients

  • 6 boneless skinless chicken thighs (680 g)
  • 60 g chopped cilantro
  • 60 ml lime juice
  • 1 tbsp (15 ml) lime zest
  • 2 tbsp (30 ml) olive oil
  • 3 cloves garlic (minced)
  • 1 tsp (5 ml) chili powder
  • 1 tsp (5 ml) cumin
  • 1 tsp (5 ml) kosher salt
  • 1 tsp (5 ml) black pepper
  • Pinch Red Pepper Flakes (Optional)
  • 240 g corn (fresh or frozen)
  • 1 red sweet pepper
  • 1 can black beans (drained)
  • 120 g shredded halal-friendly cheese
  • Avocado (sliced (or guacamole))
  • Sour Cream
  • Salsa
  • Cilantro Lime Rice


Instructions

  1. Marinate: In a large mixing bowl, combine lime juice, lime zest, cilantro, olive oil, garlic, and seasonings. Add the chicken, ensuring it’s fully covered in the mixture. Seal and refrigerate for at least 30 minutes or overnight.
  2. Cook: Preheat a grill or sturdy pan to medium-high and lightly grease it. Place the chicken on it and cook for 5-7 minutes per side or until done. Take it off the heat and let it rest covered for at least 5 minutes before cutting.
  3. Using the same pan (line with foil or use a cast iron pan if grilling), add the sliced red sweet pepper and cook for 3-4 minutes until soft. Remove the peppers and add the corn, cooking for another 3-4 minutes until heated.
  4. Assemble: In a medium bowl, layer ½ cup of cooked cilantro lime rice, chopped lettuce, grilled chicken, sautéed peppers, beans, corn, sour cream, avocado, and your choice of salsa.
