Ingredients

  • Turkey breast, 1.5 pounds (680 g) (680 grams)
  • Pineapple chunks, 2 cup (480 ml) s (340 grams)
  • Orange juice, 1 cup (240 ml) (240 milliliters)
  • Lemon juice, 2 tablespoon (30 ml) s (30 milliliters)
  • Lime juice, 2 tablespoon (30 ml) s (30 milliliters)
  • Olive oil, 2 tablespoon (30 ml) s (30 milliliters)
  • Garlic, 2 cloves, minced
  • Ground cumin, 1 teaspoon (5 ml) (2 grams)
  • Paprika, 1 teaspoon (5 ml) (2 grams)
  • Salt, 1 teaspoon (5 ml) (6 grams)
  • Black pepper, 1/2 teaspoon (3 ml) (1 gram)
  • Rice, 1 cup (240 ml) (185 grams)
  • Water, 2 cup (480 ml) s (480 milliliters)
  • Coconut milk, 1/2 cup (120 ml) (120 milliliters)
  • Green onions, 2, sliced
  • Fresh cilantro, 1/4 cup (60 ml) (15 grams), chopped


Instructions

  1. Cut the turkey breast into 1-inch (2.5 cm) cubes.
  2. In a bowl, combine orange juice, lemon juice, lime juice, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper.
  3. Add the turkey cubes to the marinade and mix well.
  4. Cover and refrigerate the turkey for at least 1 hour.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated turkey cubes and pineapple chunks onto skewers alternately.
  7. Grill the skewers for 10-12 minutes, turning occasionally, until the turkey is cooked through.
  8. While grilling, rinse the rice under cold water until the water runs clear.
  9. In a saucepan, combine the rice, water, and coconut milk; bring to a boil.
  10. Reduce the heat to low, cover, and simmer for 15 minutes until the rice is tender.
  11. Remove the rice from heat and let it sit covered for 5 minutes.
  12. Fluff the rice with a fork and stir in sliced green onions and chopped cilantro.
  13. Serve the grilled turkey and pineapple skewers with the pineapple rice on the side.
