Ingredients
- Turkey breast, 1.5 pounds (680 g) (680 grams)
- Pineapple chunks, 2 cup (480 ml) s (340 grams)
- Orange juice, 1 cup (240 ml) (240 milliliters)
- Lemon juice, 2 tablespoon (30 ml) s (30 milliliters)
- Lime juice, 2 tablespoon (30 ml) s (30 milliliters)
- Olive oil, 2 tablespoon (30 ml) s (30 milliliters)
- Garlic, 2 cloves, minced
- Ground cumin, 1 teaspoon (5 ml) (2 grams)
- Paprika, 1 teaspoon (5 ml) (2 grams)
- Salt, 1 teaspoon (5 ml) (6 grams)
- Black pepper, 1/2 teaspoon (3 ml) (1 gram)
- Rice, 1 cup (240 ml) (185 grams)
- Water, 2 cup (480 ml) s (480 milliliters)
- Coconut milk, 1/2 cup (120 ml) (120 milliliters)
- Green onions, 2, sliced
- Fresh cilantro, 1/4 cup (60 ml) (15 grams), chopped
Instructions
- Cut the turkey breast into 1-inch (2.5 cm) cubes.
- In a bowl, combine orange juice, lemon juice, lime juice, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper.
- Add the turkey cubes to the marinade and mix well.
- Cover and refrigerate the turkey for at least 1 hour.
- Preheat the grill to medium-high heat.
- Thread the marinated turkey cubes and pineapple chunks onto skewers alternately.
- Grill the skewers for 10-12 minutes, turning occasionally, until the turkey is cooked through.
- While grilling, rinse the rice under cold water until the water runs clear.
- In a saucepan, combine the rice, water, and coconut milk; bring to a boil.
- Reduce the heat to low, cover, and simmer for 15 minutes until the rice is tender.
- Remove the rice from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and stir in sliced green onions and chopped cilantro.
- Serve the grilled turkey and pineapple skewers with the pineapple rice on the side.

- Marinate the turkey cubes in the refrigerator for several hours or overnight for a richer flavor.
