Ingredients

  • 3 tablespoons unsalted butter (45 g)
  • 1 small yellow onion, diced (about 1 cup (240 ml))
  • 1 stalk celery, diced (about 1/2 cup (120 ml))
  • 1 teaspoon (5 ml) salt, divided, plus more to taste
  • 8 ounces white button mushrooms, sliced (225 g)
  • 1/2 teaspoon (3 ml) black pepper, plus more to taste
  • 1/4 cup (60 ml) apple juice or grape juice
  • 3 tablespoons all-purpose flour (23 g)
  • 1 cup low-sodium chicken broth (240 ml)
  • 3/4 cup milk (180 ml)
  • 2 cups (480 ml) diced or shredded cooked beef
  • 1 (7-ounce) can diced tomatoes, drained (about 1/2 cup (120 ml))
  • 1/2 cup (120 ml) frozen peas
  • 2 to 3 cups (600 ml) cooked white rice, for serving (optional)


Instructions

  1. Warm the butter in a big frying pan over medium heat. Toss in the onion and celery, adding half a teaspoon of salt. Stir occasionally until they become tender and see-through, about 4 to 5 minutes.
  2. Introduce the mushrooms to the skillet. Mix them to cover with butter, and sprinkle with half a teaspoon of salt and some black pepper. Continue stirring until the mushrooms are soft and their size is reduced by half, around 5 minutes.
  3. Pour in the juice and stir continuously until nearly all the liquid disappears, approximately 2 minutes.
  4. Dust the flour into the skillet and blend until the flour is slightly cooked and no dry spots are visible, about 1 minute. Pour in the chicken broth and milk, stirring thoroughly. Allow the blend to gently boil, then reduce the heat to medium-low and let it thicken slightly, approximately 5 minutes.
  5. Incorporate the cooked beef, drained tomatoes, and frozen peas (no need to thaw). Mix well and cook until the beef is warmed and the peas are hot, about 2 to 3 minutes. Adjust the seasoning with salt and pepper as needed and serve with rice, if you like. You can store the dish in a sealed container for up to 4 days.
