Description

A quick and easy classic chicken salad that combines leftover rotisserie chicken with crunchy vegetables and creamy dressing, ideal for picnics, potlucks, or busy weeknights.


Ingredients

  • 2 cups Cooked Chicken (Shredded or diced)
  • 1 cup Mayonnaise (or Greek yogurt)
  • 1 cup Diced Celery
  • 1/2 cup Diced Red Onion
  • 1/4 cup Sliced Green Onions
  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 4 leaves Lettuce
  • 4 slices Crusty Bread
  • 1 cup Tortilla Chips


Instructions

  1. In a large mixing bowl, combine the cooked chicken, mayonnaise (or Greek yogurt), diced celery, diced red onion, and sliced green onions.
  2. Add the Dijon mustard, lemon juice, kosher salt, and black pepper. Stir all the ingredients together until well incorporated.
  3. Taste and adjust the seasoning if necessary.
