A quick and easy classic chicken salad that combines leftover rotisserie chicken with crunchy vegetables and creamy dressing, ideal for picnics, potlucks, or busy weeknights.
Ingredients
- 2 cups Cooked Chicken (Shredded or diced)
- 1 cup Mayonnaise (or Greek yogurt)
- 1 cup Diced Celery
- 1/2 cup Diced Red Onion
- 1/4 cup Sliced Green Onions
- 1 tablespoon Dijon Mustard
- 2 tablespoons Lemon Juice
- 1 teaspoon Kosher Salt
- 1/2 teaspoon Black Pepper
- 4 leaves Lettuce
- 4 slices Crusty Bread
- 1 cup Tortilla Chips
Instructions
- In a large mixing bowl, combine the cooked chicken, mayonnaise (or Greek yogurt), diced celery, diced red onion, and sliced green onions.
- Add the Dijon mustard, lemon juice, kosher salt, and black pepper. Stir all the ingredients together until well incorporated.
- Taste and adjust the seasoning if necessary.
- Chill in the refrigerator for about 30 minutes.
- Serve on fresh lettuce leaves for a wrap-style meal or between slices of crusty bread for sandwiches, and enjoy with a side of tortilla chips.
