- 1 lb chicken breast
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup orzo pasta
- 2 lemons, juiced
- 2 cups spinach
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, combine chicken breast, onion, carrots, celery, and chicken broth. Bring to a boil and let it simmer until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Add orzo pasta and cook until tender, about 8-10 minutes.
- Stir in lemon juice and spinach, and season with salt and pepper.
