A delightful mix of boiled potatoes, fresh veggies, and creamy dressing, perfect for summer gatherings.
Ingredients
- 6 medium potatoes (around 3 pounds)
- 1 onion, chopped
- 1 celery stalk, chopped
- 4 hard-boiled eggs, peeled
- 2 tablespoons white distilled vinegar
- 1 cup mayonnaise
- 1 tablespoon yellow mustard
- 2 tablespoons pickle relish
- Salt and pepper to taste
- 2 spring onions, sliced
- 1 teaspoon paprika
Instructions
- Scrub, peel, and cut the potatoes into one-inch cubes.
- Place the potato cubes in a large pot and cover them with water.
- Boil the potatoes over medium-high heat for approximately 10 minutes, or until they are firm-tender.
- Drain the potatoes and set them aside to cool completely.
- In a large mixing bowl, add the cooled potato cubes along with chopped onions and celery.
- Hard-boil the eggs, cool, and peel them. Either chop them and add to the bowl or push them through a cooling rack over the potato mixture.
- For the dressing, combine the vinegar, mayonnaise, yellow mustard, pickle relish, and season with salt and pepper to taste.
- Gently fold the dressing into the potato mixture until well combined.
- Garnish with sliced spring onions and a sprinkle of paprika.
Notes
Try adding fresh herbs such as dill or parsley for an extra flavor twist.
