Description

A comforting dish with juicy chicken and fragrant jasmine rice cooked in creamy coconut milk.


Ingredients

  • 2 chicken breasts
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic, sautéing until softened.
  3. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until browned.
  4. Pour in coconut milk and chicken broth, and bring to a simmer.
  5. Add jasmine rice and stir well. Cover and reduce heat to low, cooking for about 18-20 minutes or until rice is cooked through and liquid is absorbed.
  6. Fluff the rice with a fork, garnish with fresh cilantro, and serve hot.

Notes

For enhanced flavor, marinate the chicken in coconut milk for 30 minutes before cooking. Adjust seasoning to taste.
