A comforting dish with juicy chicken and fragrant jasmine rice cooked in creamy coconut milk.
Ingredients
- 2 chicken breasts
- 1 cup coconut milk
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and minced garlic, sautéing until softened.
- Season the chicken breasts with salt and pepper, then add to the skillet. Cook until browned.
- Pour in coconut milk and chicken broth, and bring to a simmer.
- Add jasmine rice and stir well. Cover and reduce heat to low, cooking for about 18-20 minutes or until rice is cooked through and liquid is absorbed.
- Fluff the rice with a fork, garnish with fresh cilantro, and serve hot.
Notes
For enhanced flavor, marinate the chicken in coconut milk for 30 minutes before cooking. Adjust seasoning to taste.
