Description

A delicious blend of crispy chicken and tropical coconut flavors, perfect for weeknight meals and gatherings.

Ingredients

  • 1 lb chicken breast, cut into strips
  • 1 cup coconut milk
  • 1 cup shredded coconut
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Set up your breading station with flour in one bowl, beaten eggs in another, and the mixture of breadcrumbs and shredded coconut in a third.
  3. Season the chicken strips with salt and pepper.
  4. Dredge each chicken strip in flour, dip it in the egg mixture, and coat it with the coconut-breadcrumb mixture.
  5. Heat oil in a frying pan over medium heat. Fry the chicken strips until they turn golden brown on both sides.
  6. Transfer the fried chicken to a baking sheet and bake in the preheated oven for 10-15 minutes to ensure they are cooked through.
  7. Serve hot and enjoy your homemade Coconut Chicken!

Notes

For extra crunch, use panko breadcrumbs and consider marinating the chicken in coconut milk for enhanced flavor.
