Ingredients
- 1 lb chicken breast, cut into strips
- 1 cup coconut milk
- 1 cup shredded coconut
- 1 cup breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
- Oil for frying
Instructions
- Preheat the oven to 400°F (200°C).
- Set up your breading station with flour in one bowl, beaten eggs in another, and the mixture of breadcrumbs and shredded coconut in a third.
- Season the chicken strips with salt and pepper.
- Dredge each chicken strip in flour, dip it in the egg mixture, and coat it with the coconut-breadcrumb mixture.
- Heat oil in a frying pan over medium heat. Fry the chicken strips until they turn golden brown on both sides.
- Transfer the fried chicken to a baking sheet and bake in the preheated oven for 10-15 minutes to ensure they are cooked through.
