Ingredients

  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 medium yellow onion, diced
  • – 1 red bell pepper, diced
  • – 3 garlic cloves, minced
  • – 1 tablespoon (15 ml) finely grated fresh ginger, or 1 teaspoon (5 ml) ground ginger
  • – 3 boneless skinless chicken breasts, cut into 1-inch cubes (about 680 g of chicken)
  • – 2 tablespoons (30 ml) curry powder
  • – 1 ½ teaspoons (7.5 ml) garam masala
  • – 1 teaspoon (5 ml) ground coriander
  • – salt and ground black pepper, to taste
  • – 1 (400 ml) can coconut milk
  • – 1 lime, juiced (about 30 ml juice)
  • – 4 cups (800 g) cooked rice
  • – ¼ cup (15 g) roughly chopped fresh cilantro


Instructions

  1. Warm the oil in a large pan over medium heat. Introduce the onion and red bell pepper, cooking them for about 2 to 3 minutes. Mix in the garlic and ginger, stirring for an extra minute.
  2. Incorporate the chicken and spices. Add the chicken pieces to the pan along with the curry powder, garam masala, ground coriander, salt, and pepper. Cook for 5 to 7 minutes, stirring often, until the chicken is thoroughly cooked.
  3. Prepare the curry sauce. Pour in the coconut milk and lime juice. Let the mixture simmer for another 5 minutes, stirring occasionally.
  4. Finish and serve. Place some rice in a bowl and layer it with several spoonfuls of the curry chicken. Sprinkle fresh cilantro on top to garnish.
