Ingredients

  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 medium yellow onion, diced
  • – 1 red bell pepper, diced
  • – 3 garlic cloves, minced
  • – 1 tablespoon (15 ml) finely grated fresh ginger, or 1 teaspoon (5 ml) ground ginger
  • – 3 boneless skinless chicken breasts, cut into 1-inch cubes (about 680 g of chicken)
  • – 2 tablespoons (30 ml) curry powder
  • – 1 ½ teaspoons (7.5 ml) garam masala
  • – 1 teaspoon (5 ml) ground coriander
  • – kosher salt and ground black pepper, to taste
  • – 1 (400 ml) can full-fat coconut milk
  • – 1 lime, juiced (about 30 ml juice)
  • – 4 cups (800 g) cooked rice
  • – ¼ cup (60 ml) roughly chopped fresh cilantro


Instructions

  1. Begin by warming the oil in a large skillet over medium heat. Introduce the diced onion and bell pepper, and cook for about 2 to 3 minutes. Incorporate the minced garlic and grated ginger, stirring for an additional minute.
  2. Add the cubed chicken to the skillet, along with the curry powder, garam masala, ground coriander, salt, and black pepper. Cook for 5 to 7 minutes, stirring frequently, until the chicken is fully cooked.
  3. Pour in the coconut milk and lime juice, allowing the mixture to gently simmer for another 5 minutes, stirring from time to time.
  4. To serve, place a serving of rice in a bowl and ladle the coconut curry chicken on top. Finish by sprinkling with chopped cilantro.

Notes

  • Marinate chicken in curry powder and garam masala for 30 mins for a richer flavor.
