Ingredients
- – 2 tablespoons (30 ml) vegetable oil
- – 1 medium yellow onion, diced
- – 1 red bell pepper, diced
- – 3 garlic cloves, minced
- – 1 tablespoon (15 ml) finely grated fresh ginger, or 1 teaspoon (5 ml) ground ginger
- – 3 boneless skinless chicken breasts, cut into 1-inch cubes (about 680 g of chicken)
- – 2 tablespoons (30 ml) curry powder
- – 1 ½ teaspoons (7.5 ml) garam masala
- – 1 teaspoon (5 ml) ground coriander
- – kosher salt and ground black pepper, to taste
- – 1 (400 ml) can full-fat coconut milk
- – 1 lime, juiced (about 30 ml juice)
- – 4 cups (800 g) cooked rice
- – ¼ cup (60 ml) roughly chopped fresh cilantro
Instructions
- Begin by warming the oil in a large skillet over medium heat. Introduce the diced onion and bell pepper, and cook for about 2 to 3 minutes. Incorporate the minced garlic and grated ginger, stirring for an additional minute.
- Add the cubed chicken to the skillet, along with the curry powder, garam masala, ground coriander, salt, and black pepper. Cook for 5 to 7 minutes, stirring frequently, until the chicken is fully cooked.
- Pour in the coconut milk and lime juice, allowing the mixture to gently simmer for another 5 minutes, stirring from time to time.
- To serve, place a serving of rice in a bowl and ladle the coconut curry chicken on top. Finish by sprinkling with chopped cilantro.
Notes
- Marinate chicken in curry powder and garam masala for 30 mins for a richer flavor.
- Adjust curry seasoning with salt and pepper to taste.
- Simmer curry longer for a thicker sauce; add veggies like peas, carrots, or spinach for variety.
