Description

A quick and delicious coconut lime chicken dish that bursts with tropical flavors and is perfect for busy weeknights or special gatherings.


Ingredients

  • 4 skinless and boneless chicken thighs
  • 1 can of coconut milk
  • 2 tablespoons of lime juice
  • 2 garlic cloves, minced
  • 1 teaspoon of grated ginger
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Heat some oil in a large pan over medium-high heat.
  2. Season the chicken thighs with salt and pepper.
  3. Add the chicken to the pan and sear for about 4-5 minutes on each side until golden brown.
  4. Remove the chicken from the pan and set aside.
  5. In the same pan, add minced garlic and grated ginger, sauté for about 1 minute.
  6. Pour in the coconut milk and lime juice, stirring to combine.
  7. Return the chicken to the pan, cover, and let it braise in the coconut milk for about 15-20 minutes or until the chicken is cooked through and tender.
  8. Serve hot, garnished with fresh cilantro.

Notes

Consider adding chili powder for a subtle kick or smoked paprika for warmth. Store leftovers in an airtight container; they remain delightful for a few days.
