Ingredients
- 4 skinless and boneless chicken thighs
- 1 can of coconut milk
- 2 tablespoons of lime juice
- 2 garlic cloves, minced
- 1 teaspoon of grated ginger
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat some oil in a large pan over medium-high heat.
- Season the chicken thighs with salt and pepper.
- Add the chicken to the pan and sear for about 4-5 minutes on each side until golden brown.
- Remove the chicken from the pan and set aside.
- In the same pan, add minced garlic and grated ginger, sauté for about 1 minute.
- Pour in the coconut milk and lime juice, stirring to combine.
- Return the chicken to the pan, cover, and let it braise in the coconut milk for about 15-20 minutes or until the chicken is cooked through and tender.
- Serve hot, garnished with fresh cilantro.
