Description

A delightful and easy dish that combines tender chicken with a tropical peach glaze, perfect for busy weeknights.

Ingredients

  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 1 cup shredded coconut
  • 1/2 cup peach preserves
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked white rice or pasta for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the panko breadcrumbs and shredded coconut in one bowl.
  3. Combine the peach preserves and soy sauce in another bowl until smooth.
  4. Dip each piece of chicken into the peach mixture, allowing the excess to drip off.
  5. Coat the chicken with the coconut-panko blend, ensuring each piece adheres well.
  6. Place the coated chicken pieces on the prepared baking sheet.
  7. Drizzle olive oil over the chicken and season with salt and pepper.
  8. Bake for 15 to 20 minutes, or until golden brown and cooked through.
  9. Serve over cooked white rice or pasta, drizzling additional peach glaze on top if desired.

Notes

For enhanced flavor, consider marinating the chicken in soy sauce and peach preserves for a few hours before cooking.
