Ingredients
- 3 cups cooked white rice (or brown rice for nutty flavor)
- 2 cups shredded cooked chicken (rotisserie or leftover turkey)
- 1 can cream of chicken soup
- 1 can French onion soup
- 1 cup sour cream (or dairy-free yogurt)
- 1 cup shredded cheese (Mozzarella or Swiss)
- 1 cup French fried onions (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
- 1/4 cup chopped parsley (for garnish)
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well.
- Transfer the mixture to the prepared baking dish and press down gently.
- Sprinkle the shredded cheese evenly over the top, followed by half of the French fried onions.
- Bake in the preheated oven for about 30 minutes or until bubbly and the cheese has melted.
- Remove from the oven, sprinkle the remaining French fried onions on top, and return to the oven for an additional 5 minutes, or until the onions are golden brown.
- Garnish with chopped parsley before serving.
Notes
Feel free to add vegetables like broccoli or peas for extra nutrients. Ensure the chicken is pre-cooked to avoid drying out during baking.
