A heartwarming casserole featuring shredded chicken and cooked rice, combined with creamy soups, and topped with crispy French fried onions for a comforting family meal.


Ingredients

  • 3 cups cooked white rice (or brown rice for nutty flavor)
  • 2 cups shredded cooked chicken (rotisserie or leftover turkey)
  • 1 can cream of chicken soup
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (Mozzarella or Swiss)
  • 1 cup French fried onions (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1/4 cup chopped parsley (for garnish)


Instructions

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Transfer the mixture to the prepared baking dish and press down gently.
  4. Sprinkle the shredded cheese evenly over the top, followed by half of the French fried onions.
  5. Bake in the preheated oven for about 30 minutes or until bubbly and the cheese has melted.
  6. Remove from the oven, sprinkle the remaining French fried onions on top, and return to the oven for an additional 5 minutes, or until the onions are golden brown.
  7. Garnish with chopped parsley before serving.

Notes

Feel free to add vegetables like broccoli or peas for extra nutrients. Ensure the chicken is pre-cooked to avoid drying out during baking.
