Ingredients

  • 2 cups cooked rotisserie chicken, shredded
  • 4 cups broccoli florets
  • 2 cups shredded cheddar cheese (or your favorite cheese)
  • 1 cup cooked rice or quinoa
  • 1 cup cream of chicken soup (or a similar creamy alternative)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup breadcrumbs (for topping)
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F. Prepare your baking dish with a light layer of grease.
  2. Combine the shredded rotisserie chicken, broccoli florets, cooked rice, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper in a mixing bowl. Stir well to ensure even distribution of flavors.
  3. Mix in 1.5 cups of shredded cheese, reserving the remaining 0.5 cup for topping.
  4. Transfer the mixture to the greased baking dish, spreading it out evenly.
  5. Mix the breadcrumbs with the olive oil in a separate bowl, then sprinkle this mixture over the casserole. Top with the remaining cheese.
