Ingredients
- 2 cups cooked rotisserie chicken, shredded
- 4 cups broccoli florets
- 2 cups shredded cheddar cheese (or your favorite cheese)
- 1 cup cooked rice or quinoa
- 1 cup cream of chicken soup (or a similar creamy alternative)
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup breadcrumbs (for topping)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F. Prepare your baking dish with a light layer of grease.
- Combine the shredded rotisserie chicken, broccoli florets, cooked rice, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper in a mixing bowl. Stir well to ensure even distribution of flavors.
- Mix in 1.5 cups of shredded cheese, reserving the remaining 0.5 cup for topping.
- Transfer the mixture to the greased baking dish, spreading it out evenly.
- Mix the breadcrumbs with the olive oil in a separate bowl, then sprinkle this mixture over the casserole. Top with the remaining cheese.
- Bake in the preheated oven for 25 to 30 minutes, or until the top turns golden brown and the casserole bubbles.
