  • 1 cup (120 g) plain breadcrumbs
  • 3 tbsp (45 ml) maple syrup
  • 1 tbsp (15 ml) onion powder
  • 2 tsp (10 ml) sea salt
  • 2 tsp (10 ml) turmeric
  • 1 tsp (5 ml) baking powder
  • 1 tsp (5 ml) white pepper
  • vegetable oil, for frying (at least 2.5 cm deep)


Instructions

  1. Begin by putting the chicken chunks into a large resealable bag and pour in the apple cider vinegar and coconut milk. Gently knead the bag to ensure the chicken is well-covered and let it marinate for 20 to 30 minutes. Meanwhile, heat vegetable oil to a depth of at least an inch until it reaches 350 degrees F.
  2. In a bowl, thoroughly combine the all-purpose flour, plain breadcrumbs, maple syrup, onion powder, turmeric, baking powder, sea salt, and white pepper.
  3. Once marinated, remove the chicken from the liquid and dispose of the marinade. Coat every piece of chicken thoroughly with the breadcrumb mixture, then carefully place them into the hot oil.
