Ingredients
- 2 chicken breasts (boneless, skinless)
- 1 cup dill pickle juice (240 ml)
- 1/2 cup whole milk (120 ml)
- 1 large egg
- 1 cup all-purpose flour (125 g)
- 2 tablespoons powdered sugar (16 g)
- 1 teaspoon (5 ml) paprika
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) black pepper
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) onion powder
- 1/4 teaspoon (1 ml) cayenne pepper
- 1/4 teaspoon (1 ml) baking powder
- 1/4 teaspoon (1 ml) baking soda
- 1 cup vegetable oil for frying (240 ml)
- 4 hamburger buns
- 4 tablespoons melted butter (57 g)
- 4 dill pickle slices
Instructions
- Slice each chicken breast in half horizontally to make four pieces.
- Place chicken pieces in a bowl and cover with dill pickle juice.
- Marinate in the refrigerator for 30 to 60 minutes.
- In a separate bowl, whisk together the milk and egg.
- In another bowl, combine flour, confectioners’ sugar, paprika, salt, black pepper, garlic powder, onion powder, cayenne pepper, baking powder, and baking soda.
- Remove chicken from pickle juice and pat dry with paper towels.
- Dip each chicken piece into the milk and egg mixture.
- Dredge chicken in the flour mixture, ensuring an even coat.
- Heat peanut or vegetable oil in a skillet over medium heat.
- Fry chicken pieces in hot oil until golden brown and cooked through, about 4-5 minutes per side.
- Remove chicken from oil and drain on paper towels.
- Preheat a skillet or griddle over medium heat.
- Brush the inside of each bun with melted butter.
- Toast buns in the skillet until golden brown.
- Place one fried chicken piece on the bottom half of each bun.
- Top each with a dill pickle slice.
- Cover with the top half of the bun.
- Serve immediately.
