Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 1 cup dill pickle juice (240 ml)
  • 1/2 cup whole milk (120 ml)
  • 1 large egg
  • 1 cup all-purpose flour (125 g)
  • 2 tablespoons powdered sugar (16 g)
  • 1 teaspoon (5 ml) paprika
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/2 teaspoon (3 ml) onion powder
  • 1/4 teaspoon (1 ml) cayenne pepper
  • 1/4 teaspoon (1 ml) baking powder
  • 1/4 teaspoon (1 ml) baking soda
  • 1 cup vegetable oil for frying (240 ml)
  • 4 hamburger buns
  • 4 tablespoons melted butter (57 g)
  • 4 dill pickle slices


Instructions

  1. Slice each chicken breast in half horizontally to make four pieces.
  2. Place chicken pieces in a bowl and cover with dill pickle juice.
  3. Marinate in the refrigerator for 30 to 60 minutes.
  4. In a separate bowl, whisk together the milk and egg.
  5. In another bowl, combine flour, confectioners’ sugar, paprika, salt, black pepper, garlic powder, onion powder, cayenne pepper, baking powder, and baking soda.
  6. Remove chicken from pickle juice and pat dry with paper towels.
  7. Dip each chicken piece into the milk and egg mixture.
  8. Dredge chicken in the flour mixture, ensuring an even coat.
  9. Heat peanut or vegetable oil in a skillet over medium heat.
  10. Fry chicken pieces in hot oil until golden brown and cooked through, about 4-5 minutes per side.
  11. Remove chicken from oil and drain on paper towels.
  12. Preheat a skillet or griddle over medium heat.
  13. Brush the inside of each bun with melted butter.
  14. Toast buns in the skillet until golden brown.
  15. Place one fried chicken piece on the bottom half of each bun.
  16. Top each with a dill pickle slice.
  17. Cover with the top half of the bun.
  18. Serve immediately.
