Ingredients

  • – 1 lb (454 g) boneless chicken breasts (about 2 large breasts) (or sub for 12 oz (340 g) cooked grilled beef)
  • – 2 tsp (10 ml) vegetable oil
  • – 4 pieces green leaf lettuce
  • – 4 whole wheat tortillas or tortillas of choice (I used low carb)
  • – 1 cup (125 g) thick shredded mozzarella and cheddar cheese
  • – Avocado Lime Ranch Dressing optional for dipping (or you can use store bought or dressing of choice)


Instructions

  1. Warm up the grill to a medium-high setting and apply oil to the grill grates. I prefer using my Ninja Foodi indoor grill, but an outdoor grill works just as well. Alternatively, you can cook the chicken on a stovetop pan or in an air fryer.
  2. Halve the chicken breasts to create four thinner pieces. Use a paper towel to dry the chicken and place them in a bowl. Add vegetable oil and season with salt and pepper, mixing thoroughly to coat the chicken evenly.
  3. Position the chicken pieces on the grill and cook each side for 2-3 minutes until the internal temperature reaches 155°F, allowing carry-over cooking to bring it to 165°F.
  4. Take the chicken off the grill and set it on a cutting board or plate. Let it sit for 5-10 minutes before cutting, which helps retain the juices.
  5. Heat the tortillas in the microwave for 10-15 seconds to make them more flexible and prevent tearing.
  6. Layer each tortilla with lettuce, cheese, and then the sliced chicken, distributing a quarter of each ingredient per wrap.
  7. Roll them up like a burrito, slice in half, and serve with avocado lime ranch dressing or your preferred dressing.
  8. Keep any leftover wraps in an airtight container in the refrigerator for 4-5 days.
