Ingredients
- 3 tbsp (45 ml) Unsalted Butter divided
- 1 tbsp (15 ml) Vegetable Oil
- 1/2 tsp (3 ml) Dried Thyme
- 1 large Sweet Onion finely chopped
- 4 cloves Garlic finely chopped
- 1 cup (150 g) Carrots shredded or chopped
- 1 cup (150 g) Celery finely chopped
- 1 cup (150 g) Frozen Peas
- 1 cup (200 g) uncooked Orzo
- 2 cups (480 ml) Chicken or Vegetable Broth
- 1 cup (150 g) Cooked Beef roughly chopped or shredded
- 1 cup (240 ml) Coconut Milk
- ½ cup (50 g) Grated Parmesan
- Salt and Pepper
Instructions
- Melt 2 tablespoons of butter along with vegetable oil in a sturdy pan over medium heat. Once the mixture is warm, add the chopped onion with a dash of salt and sauté for 4-5 minutes.
- Incorporate the garlic, shredded carrots, chopped celery, frozen peas, and dried thyme, adding another dash of salt. Cook for a few more minutes until the garlic becomes tender and aromatic, and the vegetables are heated through.
- Mix in the uncooked orzo along with the broth, then stir. Once it begins to simmer, cover the pan and allow it to cook for approximately 6 minutes.
- Take off the lid and blend in the cooked beef and coconut milk, stirring once again. Replace the lid and let it cook for an additional 4 minutes or until the orzo reaches an al dente texture.
- If the dish appears too liquidy, remove the lid and continue to cook for a few more minutes to reduce the excess liquid.
- Combine the grated Parmesan with the remaining butter, then season with salt and pepper to your liking. Enjoy your meal!
