Ingredients

  • 3 tbsp (45 ml) Unsalted Butter divided
  • 1 tbsp (15 ml) Vegetable Oil
  • 1/2 tsp (3 ml) Dried Thyme
  • 1 large Sweet Onion finely chopped
  • 4 cloves Garlic finely chopped
  • 1 cup (150 g) Carrots shredded or chopped
  • 1 cup (150 g) Celery finely chopped
  • 1 cup (150 g) Frozen Peas
  • 1 cup (200 g) uncooked Orzo
  • 2 cups (480 ml) Chicken or Vegetable Broth
  • 1 cup (150 g) Cooked Beef roughly chopped or shredded
  • 1 cup (240 ml) Coconut Milk
  • ½ cup (50 g) Grated Parmesan
  • Salt and Pepper


Instructions

  1. Melt 2 tablespoons of butter along with vegetable oil in a sturdy pan over medium heat. Once the mixture is warm, add the chopped onion with a dash of salt and sauté for 4-5 minutes.
  2. Incorporate the garlic, shredded carrots, chopped celery, frozen peas, and dried thyme, adding another dash of salt. Cook for a few more minutes until the garlic becomes tender and aromatic, and the vegetables are heated through.
  3. Mix in the uncooked orzo along with the broth, then stir. Once it begins to simmer, cover the pan and allow it to cook for approximately 6 minutes.
  4. Take off the lid and blend in the cooked beef and coconut milk, stirring once again. Replace the lid and let it cook for an additional 4 minutes or until the orzo reaches an al dente texture.
  5. If the dish appears too liquidy, remove the lid and continue to cook for a few more minutes to reduce the excess liquid.
  6. Combine the grated Parmesan with the remaining butter, then season with salt and pepper to your liking. Enjoy your meal!
