Ingredients
- 1 lb chicken breast
- 6 cups chicken broth
- 1 cup orzo pasta
- 1 onion, chopped
- 2 carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh dill or parsley for garnish
Instructions
- Heat some oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until softened.
- Add minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a boil.
- Add the chicken breast and orzo pasta, reduce heat, and simmer until the chicken is cooked through and orzo is tender.
- Remove the chicken, shred it, and return it to the pot.
