Ingredients

  • 12 ounces penne pasta
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth
  • ½ cup milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish (optional)


Instructions

  1. Cook the penne in a large pot of salted boiling water according to the package instructions. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Add the cubed chicken and season with salt and pepper. Cook until browned and cooked through, about 5-6 minutes.
  3. Sprinkle the ranch seasoning mix over the cooked chicken, stirring until evenly coated.
  4. Add the softened cream cheese to the pot. Stir until melted and combined with the chicken.
  5. Gradually pour in the chicken broth and milk, stirring constantly. Bring to a gentle simmer.
  6. Add the drained penne pasta to the creamy mixture and mix well to coat.
