Ingredients
- 3 chicken breasts (about 650g)
- 1â…“ tablespoons cajun seasoning
- 1 cup single cream (half and half cream)
- â…“ cup chicken broth or stock
- 40g unsalted butter
- â…“ cup onion, finely chopped
- 3 large garlic cloves, minced
- 3 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions
- Cut the chicken breasts lengthwise into cutlets and pat them dry with a kitchen towel.
- Season the chicken cutlets on both sides with salt, black pepper, and cajun seasoning, reserving about 1 teaspoon for later.
- In a separate bowl, combine the flour and a pinch of cajun seasoning, mixing well.
- Coat each chicken cutlet in the seasoned flour, shaking off any excess.
- Heat a skillet over medium-high heat and melt the butter until hot.
- Cook each floured chicken cutlet for about 3 minutes on each side until golden. Remove the chicken and set aside.
- Add the chopped onions and minced garlic to the pan, sautéing for 1-2 minutes.
- Carefully add the chicken broth to deglaze the bottom of the pan.
- Pour in the cream and add the remaining cajun seasoning, mixing well. Simmer for about 1 minute.
- Return the chicken to the skillet and simmer for an additional 3-5 minutes until cooked through, spooning sauce over the chicken as desired.
Notes
For a spicier version, increase the amount of cajun seasoning. Pair with garlic bread or mashed potatoes for a complete meal.
