Ingredients
- 3 chicken breasts (about 650g)
- 1â…“ tablespoon cajun seasoning
- 1 cup single cream half and half cream
- â…“ cup chicken broth/stock
- 40 g unsalted butter
- â…“ cup onion, finely chopped
- 3 large garlic cloves, minced
- 3 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions
- Cut the chicken breasts lengthwise into cutlets and pat them dry with a kitchen paper towel.
- Season both sides of the chicken cutlets with salt, black pepper, and cajun seasoning, reserving about 1 teaspoon for later.
- In a separate bowl, combine flour and a pinch of cajun seasoning.
- Coat each seasoned cutlet in the flour mixture, shaking off excess flour.
- Heat a skillet over medium-high heat and add the butter.
- Once melted and hot, add the floured chicken cutlets to the skillet and cook for 3 minutes on each side or until golden brown. Remove the cooked chicken from the pan and set aside.
- Add chopped onions and minced garlic to the hot pan, sautéing for about 1-2 minutes while stirring continuously.
- Carefully pour in the chicken broth and stir, deglazing the bottom of the pan.
- Add the cream and the remaining cajun seasoning, stirring to combine.
- Reduce heat and allow it to simmer for 1 minute. Taste and adjust seasoning as needed.
- Return the cooked chicken to the creamy sauce and simmer for an additional 3-5 minutes, or until the chicken is cooked through.
Notes
For a spicier kick, adjust the amount of cajun seasoning as desired. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
