A flavorful and creamy cajun chicken dish that’s perfect for weeknight dinners, showcasing bold spices and rich ingredients.


Ingredients

  • 3 chicken breasts (about 650g)
  • 1â…“ tablespoon cajun seasoning
  • 1 cup single cream half and half cream
  • â…“ cup chicken broth/stock
  • 40 g unsalted butter
  • â…“ cup onion, finely chopped
  • 3 large garlic cloves, minced
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste


Instructions

  1. Cut the chicken breasts lengthwise into cutlets and pat them dry with a kitchen paper towel.
  2. Season both sides of the chicken cutlets with salt, black pepper, and cajun seasoning, reserving about 1 teaspoon for later.
  3. In a separate bowl, combine flour and a pinch of cajun seasoning.
  4. Coat each seasoned cutlet in the flour mixture, shaking off excess flour.
  5. Heat a skillet over medium-high heat and add the butter.
  6. Once melted and hot, add the floured chicken cutlets to the skillet and cook for 3 minutes on each side or until golden brown. Remove the cooked chicken from the pan and set aside.
  7. Add chopped onions and minced garlic to the hot pan, sautéing for about 1-2 minutes while stirring continuously.
  8. Carefully pour in the chicken broth and stir, deglazing the bottom of the pan.
  9. Add the cream and the remaining cajun seasoning, stirring to combine.
  10. Reduce heat and allow it to simmer for 1 minute. Taste and adjust seasoning as needed.
  11. Return the cooked chicken to the creamy sauce and simmer for an additional 3-5 minutes, or until the chicken is cooked through.

Notes

For a spicier kick, adjust the amount of cajun seasoning as desired. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
