Ingredients
- 1 tbsp vegetable oil (15 ml)
- 1 lb boneless chicken (454 g)
- 20 oz broccoli florets (567 g)
- 1 cup Coconut Cream (240 ml)
- 1/2 cup (120 ml) grated vegan cheese alternative
- 1/2 tsp (3 ml) garlic salt
- 1 cup (240 ml) dairy-free mozzarella cheese
Instructions
- Warm up the vegetable oil in a skillet that can go in the oven. Place the chicken pieces in and cook until they are browned.
- Chop the broccoli florets into smaller chunks and add them to the skillet with the chicken.
- Mix the coconut cream, grated vegan cheese alternative, and garlic salt together. Drizzle this mixture over the broccoli and chicken.
- Set the oven to 350°F and bake the dish for 10 minutes. Take it out and scatter the dairy-free mozzarella cheese across the top.
- Return to the oven for an additional 7 minutes, or until the cheese is lightly browned. Serve promptly while the cheese is still melted.
