Ingredients

  • 4 tablespoons vegetable oil (60 ml)
  • 1 cup sliced carrots (140 g)
  • 4 oz sliced mushrooms (113 g)
  • 1 large or 2 small ribs celery, thinly sliced
  • 1 large shallot or small onion, chopped
  • Homemade seasoned salt and pepper
  • 2 cloves garlic, pressed or minced
  • 1 teaspoon (5 ml) poultry seasoning
  • Pinch dried thyme
  • 3 tablespoons all-purpose flour (40 g)
  • 2 cups chicken stock or broth (480 ml)
  • 1 cup milk, any kind, I use unsweetened almond milk (240 ml)
  • 12 oz package gluten-free gnocchi (340 g)
  • 1-1/2 cups shredded cooked beef, ~1/2 lb pre-cooked (225 g)
  • 1/2 cup frozen peas (70 g)


Instructions

  1. Warm a Dutch oven or large pot on medium-high heat. Pour in vegetable oil, then add the carrots, mushrooms, celery, and shallots/onions. Cook until the mushrooms release their juices and the liquid evaporates, about 3-4 minutes. Add homemade seasoned salt and pepper, and continue cooking, reducing the heat if needed, until the vegetables are soft, roughly 6-7 more minutes.
  2. Introduce the garlic, poultry seasoning, and thyme, then cook until the garlic becomes very aromatic, about 1-2 minutes.
  3. Sprinkle the flour over the veggies, mix to coat, and let cook for 1 minute. Gradually add the chicken stock while stirring to prevent clumps, then pour in the milk and increase the heat to medium-high. Allow the mixture to simmer, stirring occasionally, then incorporate the gnocchi and mix well. Reduce the heat to medium and let it simmer, stirring often, until the gnocchi are tender, about 5-6 minutes.
  4. Mix in the cooked beef and frozen peas, then taste and adjust the seasoning with salt and/or pepper if needed. Serve by ladling into bowls.

Notes

  • For a more flavorful dish, consider using homemade chicken stock instead of store-bought.
  • Try experimenting with various types of milk for a unique taste – coconut milk can add a touch of sweetness.
