Ingredients
- 2 cups cooked chicken (shredded or diced)
- 1 cup long-grain white rice (uncooked)
- 1 can (10.5 ounces) cream of chicken soup
- 1 can (14.5 ounces) chicken broth
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/2 cup milk
- 1/4 cup chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with olive oil.
- In a large mixing bowl, combine cooked chicken, uncooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, black pepper, and salt. Stir until well combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Cover the dish tightly with aluminum foil and bake for 45 minutes.
- After 45 minutes, remove the foil and stir the casserole.
- Pour the milk over the top, then sprinkle shredded cheddar cheese evenly.
- Return the casserole to the oven, uncovered, and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let cool for 5 minutes before serving. Garnish with chopped parsley if desired.
