Ingredients
- 2 cups (480 ml) cooked white rice (370 grams)
- 2 cups (480 ml) cooked beef, diced (280 grams)
- 2 cups (480 ml) broccoli florets, blanched (180 grams)
- 1 can condensed cream of chicken soup (300 grams)
- 1 cup (240 ml) milk (240 milliliters)
- 1 cup (240 ml) shredded mozzarella cheese (120 grams)
- 1/2 cup (120 ml) Greek yogurt (120 grams)
- 1/2 teaspoon (3 ml) garlic powder (2.5 grams)
- 1/2 teaspoon (3 ml) onion powder (2.5 grams)
- Salt to taste
- Black pepper to taste
- 1/4 cup (60 ml) grated vegan cheese (25 grams)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked white rice and diced chicken breast.
- Add the blanched broccoli florets to the bowl.
- Pour in the condensed cream of chicken soup.
- Stir in the milk until well combined.
- Add the shredded cheddar cheese to the mixture.
- Mix in the sour cream until smooth.
- Sprinkle in the garlic powder and onion powder.
- Season with salt and black pepper to taste.
- Stir all ingredients until evenly combined.
- Transfer the mixture into a greased 9×13 inch (23×33 cm) baking dish.
- Spread the mixture evenly in the baking dish.
- Sprinkle the grated Parmesan cheese over the top.
- Bake in the preheated oven for 25-30 minutes, or until heated through and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
