Ingredients
- 2 large chicken breasts, cubed
- 1/2 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/3 cup chopped sun-dried tomatoes
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon oregano
- 1/2 teaspoon thyme
- Gnocchi (pre-packaged or homemade)
Instructions
- Heat a skillet over medium-high heat and add olive oil and butter.
- Combine flour, salt, pepper, paprika, and garlic powder in a bowl.
- Dredge chicken cubes in the flour mixture and cook in the skillet for 4-5 minutes per side until golden brown (internal temp 165°F). Remove chicken from skillet.
- Add minced garlic to the skillet and sauté for a minute.
- Pour chicken broth and heavy cream into the skillet, stirring continuously.
- Blend in Parmesan cheese and stir until melted and fully incorporated.
- Add sun-dried tomatoes, red pepper flakes, oregano, and thyme into the sauce.
- Let the sauce simmer on low heat.
- Cook the gnocchi according to package instructions, then add them to the sauce.
- Add the cooked chicken back to the skillet and stir to combine.
- Serve in bowls garnished with extra Parmesan and red pepper flakes, if desired.
Notes
For added nutrition, consider incorporating leafy greens like spinach or kale. If the sauce is too thick, add more broth or cream.
