Ingredients
- 1 pound boneless, skinless chicken breast
- 8 ounces penne pasta
- 1 cup sun-dried tomatoes
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Season the chicken breast with salt and pepper on both sides.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken and cook until golden brown on both sides, about 3-4 minutes each side. Remove chicken and set aside.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Add sun-dried tomatoes and cook for an additional 2-3 minutes.
- Pour in chicken broth and heavy cream, stirring to combine and let simmer for 5 minutes.
- Stir in grated Parmesan cheese until melted and fully combined.
- Cook penne pasta according to the package instructions until al dente.
- Slice the chicken and add back to the skillet with the creamy sauce.
- Mix in cooked penne pasta until well coated.
- Transfer to preheated oven and bake for 15-20 minutes until sauce is bubbling.
- Garnish with fresh basil before serving.

Taste and adjust seasoning as needed. Consider using oil-packed sun-dried tomatoes for added flavor.
