Ingredients

  • 2 cups orzo pasta
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until soft.
  2. Add the diced chicken and cook until no longer pink.
  3. Stir in the frozen vegetables, thyme, salt, and pepper, cooking for another 2-3 minutes.
  4. Add the orzo and chicken broth, bring to a boil.
  5. Reduce heat and simmer for 10-12 minutes, or until the orzo is tender.
  6. Stir in the heavy cream and heat through.
  7. Serve warm and garnish with fresh parsley if desired.

Notes

For a thicker consistency, add more orzo; for a lighter dish, incorporate more chicken broth. Use fresh herbs for added flavor.
