A comforting and easy-to-prepare dish that combines the classic flavors of pot pie with orzo pasta, offering richness and warmth in every bite.
Ingredients
- 2 cups orzo pasta
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until soft.
- Add the diced chicken and cook until no longer pink.
- Stir in the frozen vegetables, thyme, salt, and pepper, cooking for another 2-3 minutes.
- Add the orzo and chicken broth, bring to a boil.
- Reduce heat and simmer for 10-12 minutes, or until the orzo is tender.
- Stir in the heavy cream and heat through.
- Serve warm and garnish with fresh parsley if desired.
Notes
For a thicker consistency, add more orzo; for a lighter dish, incorporate more chicken broth. Use fresh herbs for added flavor.
