Ingredients
- 2 Boneless Skinless Chicken Breasts (500g) cooked & diced
- 1 teaspoon (5 ml) Onion Powder
- 1 teaspoon (5 ml) Garlic Powder
- 1 teaspoon (5 ml) Paprika
- 8 ounces Orzo Pasta (225g)
- 2 Celery Stalks (100g) finely diced
- 2 Carrots (150g) finely diced
- ½ Yellow Onion (75g) finely diced
- 5 tablespoons (75 ml) Butter
- 2 tablespoons (30 ml) Olive Oil
- 2 cups Chicken Broth (475ml)
- ½ cup Heavy Whipping Cream (120ml)
- 1 teaspoon (5 ml) Chicken Boullion Powder
- 1/3 cup All Purpose Flour (40g)
Instructions
- Prepare the orzo following the package directions. Sprinkle the chicken breasts with onion powder, garlic powder, paprika, salt, and black pepper. Heat a bit of olive oil in a skillet and cook the chicken on medium-high heat until it reaches an internal temperature of 165°F. Cut the cooked chicken into small cubes.
- In a large skillet set over medium-high heat, melt the butter with olive oil. Add the finely chopped onion, carrots, and celery to the pan. Sauté the vegetables for 4-5 minutes until they begin to soften. Lower the heat to a simmer and dust the veggies with all-purpose flour, whisking them together to create a paste or roux.
- Continue stirring the roux for 2-3 minutes, then gradually add the chicken broth and heavy whipping cream. Whisk until the mixture is smooth and starts to thicken.
- Incorporate the diced chicken into the mixture and let it simmer until it reaches the desired consistency. Add the cooked orzo and blend everything together. Serve and enjoy!
