  • 2 Boneless Skinless Chicken Breasts (500g) cooked & diced
  • 1 teaspoon (5 ml) Onion Powder
  • 1 teaspoon (5 ml) Garlic Powder
  • 1 teaspoon (5 ml) Paprika
  • 8 ounces Orzo Pasta (225g)
  • 2 Celery Stalks (100g) finely diced
  • 2 Carrots (150g) finely diced
  • ½ Yellow Onion (75g) finely diced
  • 5 tablespoons (75 ml) Butter
  • 2 tablespoons (30 ml) Olive Oil
  • 2 cups Chicken Broth (475ml)
  • ½ cup Heavy Whipping Cream (120ml)
  • 1 teaspoon (5 ml) Chicken Boullion Powder
  • 1/3 cup All Purpose Flour (40g)


Instructions

  1. Prepare the orzo following the package directions. Sprinkle the chicken breasts with onion powder, garlic powder, paprika, salt, and black pepper. Heat a bit of olive oil in a skillet and cook the chicken on medium-high heat until it reaches an internal temperature of 165°F. Cut the cooked chicken into small cubes.
  2. In a large skillet set over medium-high heat, melt the butter with olive oil. Add the finely chopped onion, carrots, and celery to the pan. Sauté the vegetables for 4-5 minutes until they begin to soften. Lower the heat to a simmer and dust the veggies with all-purpose flour, whisking them together to create a paste or roux.
  3. Continue stirring the roux for 2-3 minutes, then gradually add the chicken broth and heavy whipping cream. Whisk until the mixture is smooth and starts to thicken.
  4. Incorporate the diced chicken into the mixture and let it simmer until it reaches the desired consistency. Add the cooked orzo and blend everything together. Serve and enjoy!
