Ingredients
- 1 yellow onion (85g)
- 2 tbsp vegetable oil (30ml)
- 1 boneless, skinless chicken breast (about 300g)
- 1 cup long grain white rice (185g)
- 1/2 tsp dried thyme (1.5g)
- 1/4 tsp dried sage (0.6g)
- 1/4 tsp salt (1.5g)
- freshly cracked pepper (0.6g)
- 3 cups chicken broth (710ml)
- 1/2 lb. frozen mixed vegetables (225g)
- 1/3 cup coconut milk (80ml)
- 4 oz. cheddar cheese, shredded (115g)
Instructions
- Chop the onion and place it in a deep, oven-safe skillet with the vegetable oil. Cook over medium heat until the onion becomes soft and clear.
- As the onion cooks, cut the chicken breast into 1/2-inch cubes. Add the chicken pieces to the pan and continue cooking for about 3 minutes, just until the chicken’s exterior turns opaque. The chicken will fully cook later with the rice.
- Incorporate the rice, thyme, sage, salt, and a few turns of freshly cracked pepper into the skillet. Pour in the chicken broth and mix everything together.
- Cover the skillet with a lid, increase the heat to medium-high, and bring the broth to a boil. Once boiling, reduce the heat to low and let it simmer for 15 minutes, stirring occasionally and replacing the lid each time. This method will create a creamy rice dish by cooking the rice in more broth and stirring now and then.
- After 15 minutes, check if the rice is tender and creamy. If not, let it cook for another 5 minutes. Add the frozen mixed vegetables directly to the skillet, cover, and let them heat through over medium-low heat for 5 minutes. Then, mix in the coconut milk, taste, and adjust the salt if necessary, depending on your broth’s saltiness.
- Switch on the broiler in your oven, sprinkle the shredded cheddar cheese over the skillet, and place it under the broiler for a few minutes until the cheese melts. Serve while hot.
