Ingredients

  • 2 chicken breasts
  • 1 tsp salt flakes
  • 1/4 tsp pepper
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/4 cup all-purpose flour
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter (1 tbsp for cooking, 1 tbsp for sauce)
  • 1 tbsp garlic, freshly minced
  • 1/2 cup chicken stock
  • 300 ml thickened/heavy cream
  • 1 tsp Dijon mustard
  • 1/2 cup Parmesan cheese
  • Salt and pepper, to taste
  • Mashed potatoes or steamed rice/pasta, for serving
  • Steamed greens, for serving
  • 1 tbsp parsley, finely chopped, for garnish
  • Lemon wedges, for serving


Instructions

  1. Season chicken schnitzels with salt, pepper, sweet paprika, onion powder, and dried thyme, ensuring even coating.
  2. Dredge each schnitzel in all-purpose flour, shaking off excess.
  3. Heat olive oil and 1 tablespoon of unsalted butter in a skillet over medium-high heat.
  4. Cook schnitzels for 3-4 minutes on each side until golden brown and cooked through.
  5. Remove schnitzels and set aside.
  6. Melt another tablespoon of butter in the same skillet, add minced garlic, and sauté until fragrant.
  7. Pour in chicken stock, heavy cream, Dijon mustard, and Parmesan cheese; stir and heat through, adding salt and pepper to taste.
  8. Return the schnitzels to the skillet, coating them in the creamy sauce.
  9. Serve with mashed potatoes, rice, or pasta, and steamed greens; garnish with parsley and lemon wedges.
