Ingredients
- 2 chicken breasts
- 1 tsp salt flakes
- 1/4 tsp pepper

- 1 tsp onion powder
- 1 tsp dried thyme
- 1/4 cup all-purpose flour
- 1 tbsp olive oil
- 2 tbsp unsalted butter (1 tbsp for cooking, 1 tbsp for sauce)
- 1 tbsp garlic, freshly minced
- 1/2 cup chicken stock
- 300 ml thickened/heavy cream
- 1 tsp Dijon mustard
- 1/2 cup Parmesan cheese
- Salt and pepper, to taste
- Mashed potatoes or steamed rice/pasta, for serving
- Steamed greens, for serving
- 1 tbsp parsley, finely chopped, for garnish
- Lemon wedges, for serving
Instructions
- Season chicken schnitzels with salt, pepper, sweet paprika, onion powder, and dried thyme, ensuring even coating.
- Dredge each schnitzel in all-purpose flour, shaking off excess.
- Heat olive oil and 1 tablespoon of unsalted butter in a skillet over medium-high heat.
- Cook schnitzels for 3-4 minutes on each side until golden brown and cooked through.
- Remove schnitzels and set aside.
- Melt another tablespoon of butter in the same skillet, add minced garlic, and sauté until fragrant.
- Pour in chicken stock, heavy cream, Dijon mustard, and Parmesan cheese; stir and heat through, adding salt and pepper to taste.
- Return the schnitzels to the skillet, coating them in the creamy sauce.
- Serve with mashed potatoes, rice, or pasta, and steamed greens; garnish with parsley and lemon wedges.
