Ingredients
- – 8 ounces (227 g) uncooked pasta
- – 2 chicken breasts, cut into small bite-size pieces
- – Salt & pepper, to taste
- – Flour for dredging
- – 1 tablespoon (15 ml) butter
- – 1 tablespoon (15 ml) olive oil
- – 4 cloves garlic, minced
- – 80 ml chicken broth
- – 5 ml lemon juice
- – 2.5 ml Dijon mustard
- – 1.25 ml Italian seasoning
- – 240 ml heavy/whipping cream
- – 140 g fresh baby spinach
- – 120 g freshly grated Parmesan cheese
Instructions
- Start by bringing a big pot of salted water to a boil for the pasta. Cook the pasta until it is firm but not hard, as per the package guidelines.
- In the meantime, dice the chicken breasts into small, bite-sized chunks and season them with salt and pepper. Lightly coat the chicken pieces with flour.
- Melt the butter together with the olive oil in a pan over medium-high heat. Once the pan is hot, add the chicken and cook until the exterior is no longer pink. Remove the chicken from the pan and set it aside for the moment.
- Remove the pan from the heat and add the minced garlic, chicken broth, lemon juice, Dijon mustard, and Italian seasoning. Return the pan to the heat and let the mixture simmer for about a minute, scraping up any browned bits from the bottom of the pan.
- Introduce the chicken, heavy cream, and fresh spinach into the pan. Allow it to cook for approximately 5 minutes or until the chicken is thoroughly cooked. If the mixture is bubbling excessively or the sauce is thickening too quickly, consider lowering the heat.
- Once the pasta is cooked, drain it and mix it with the sauce in the pan. Add the freshly grated Parmesan cheese and stir well. Adjust the seasoning with additional salt and pepper if necessary.
