Ingredients

  • 4 bell peppers, halved
  • 2 cups shredded chicken breast
  • 8 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 1/4 cup scallions, chopped
  • 1/2 cup salsa verde
  • 1 cup cheddar cheese, for topping


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix shredded chicken, cream cheese, cheddar cheese, scallions, and salsa verde in a large bowl.
  3. Fill each halved pepper generously with the chicken mixture.
