Ingredients

  • 8 ounce (227 g) s linguine
  • 1 1/2 pounds (680 g) boneless skinless chicken breasts, cut into 1-inch bites
  • 2 tablespoon (30 ml) s extra virgin olive oil
  • 1/2 teaspoon (3 ml) paprika
  • 1/2 teaspoon (3 ml) garlic salt
  • 1/2 teaspoon (3 ml) kosher salt
  • 1/4 teaspoon (1 ml) pepper
  • 1/4 cup (60 ml) (4 tablespoon (60 ml) s / 57 g) cowboy butter, divided
  • 3/4 cup (178.5 g) heavy cream
  • 1 teaspoon (5 ml) garlic salt
  • 1/4 teaspoon (1 ml) crushed red pepper flakes
  • 1/2 teaspoon (3 ml) lemon juice
  • Lemon slices, for garnish
  • Parsley, chopped for garnish


Instructions

  1. Fill a large pot with water, add salt, and bring it to a boil. Cook the pasta until it reaches the desired tenderness as per package directions. Drain and leave aside.
  2. Heat a large pan over medium-high flame and pour in the oil. Once it’s hot, place the chicken pieces in a single layer. Sprinkle evenly with paprika, garlic salt, kosher salt, and pepper. Let it cook for 3-4 minutes on one side until it turns golden.
  3. Add 2 tablespoons of cowboy butter to the pan. Turn the chicken pieces over and continue to cook them until they are brown and reach an internal temperature of 165°F, approximately another 3-4 minutes.
  4. Take the chicken out of the pan and place it on a plate, covering it loosely to retain warmth.
  5. Lower the heat. Add the remaining cowboy butter, heavy cream, garlic salt, and red pepper flakes to the pan. Use a spatula to mix in the browned bits from the pan bottom, stirring until the butter is fully melted.
  6. Return the drained pasta and the cooked chicken to the pan, tossing them to ensure they are well coated with the sauce.
  7. Mix in the lemon juice thoroughly.
  8. Present the dish with lemon slices for garnish.
