- 1 pound chicken breast (plant-based chicken can be used for a vegan option)
- 4 tablespoons butter (use non-dairy butter for a vegan option)
- 3 cloves garlic (minced)
- 1 medium onion (yellow or white)
- 1 cup heavy cream (coconut milk works as a great dairy-free alternative)
- 1 cup chicken broth (vegetable broth for vegetarian offering)
- 1/2 cup Parmesan cheese (nutritional yeast can be used for a vegan option)
- 2 teaspoons Italian seasoning
- 1/4 teaspoon red pepper flakes (adjust to taste)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Melt the butter in a large skillet over medium heat. Let it bubble for a moment before adding the chopped onion. Sauté until the onion becomes translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the chicken pieces, seasoning them with salt and pepper. Cook until the chicken is golden brown and no longer pink in the center, approximately 6-8 minutes.
- Pour in the chicken broth and bring it to a simmer. Allow it to reduce slightly before adding the cream or coconut milk.
- Stir the Italian seasoning, red pepper flakes, and Parmesan cheese into the mixture, creating a luscious sauce. If the sauce feels too thick, add in a bit of the reserved pasta water.
- Combine the pasta with the sauce, tossing thoroughly so every strand gets coated. Serve hot, garnished with fresh parsley.
